  • Canned chickpeas - 240 grams, drained and rinsed
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 milliliters
  • Pomegranate seeds - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium tajine or a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Add the sliced carrot, diced zucchini, and diced bell pepper to the skillet, cooking for 5-7 minutes until they begin to soften.
  5. Mix in the drained chickpeas, cinnamon, cumin, paprika, salt, and black pepper, stirring well to combine all ingredients.
  6. Pour in the vegetable broth, bring to a gentle simmer, and cover the tajine or skillet.
  7. Let it cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  8. Remove from heat and stir in the pomegranate seeds, chopped parsley, and lemon juice just before serving.
