- Pomegranate seeds - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium tajine or a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and sauté for another minute until fragrant.
- Add the sliced carrot, diced zucchini, and diced bell pepper to the skillet, cooking for 5-7 minutes until they begin to soften.
- Mix in the drained chickpeas, cinnamon, cumin, paprika, salt, and black pepper, stirring well to combine all ingredients.
- Pour in the vegetable broth, bring to a gentle simmer, and cover the tajine or skillet.
- Let it cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Remove from heat and stir in the pomegranate seeds, chopped parsley, and lemon juice just before serving.
