  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, chopped
  • Carrot - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon

Steps

  1. In a tajine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced red bell pepper, zucchini, carrot, and tomato, cooking for another 5 minutes until the vegetables soften.
  4. Add the ground cumin, coriander, paprika, salt, and black pepper, stirring well to combine.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Add the prawns and cook for about 5-7 minutes, or until they turn pink and opaque.
  7. Remove from heat, stir in the fresh parsley and lemon juice.
  8. Serve hot, garnished with additional parsley if desired.
