  • Chickpeas (cooked) - 200 grams
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Fresh coriander - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium tajine or non-stick pot over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  3. Stir in the diced zucchini, red bell pepper, and carrot, cooking for another 5 minutes until the vegetables begin to soften.
  4. Add the cumin powder, cinnamon, salt, and black pepper, stirring to coat the vegetables evenly with the spices.
  5. Incorporate the cooked chickpeas and pour in the vegetable broth, bringing the mixture to a gentle simmer.
  6. Cover the tajine and let it cook for about 15 minutes, stirring occasionally, until the vegetables are tender.
  7. Meanwhile, cut the passion fruits in half and scoop out the pulp, setting aside.
  8. Once the vegetables are cooked, remove the tajine from heat and fold in the passion fruit pulp along with the chopped coriander.
