Ingredients

  • Dried figs - 200 grams
  • Chicken thighs (boneless, skinless) - 250 grams
  • Almonds (sliced) - 50 grams
  • Walnuts (chopped) - 30 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Cinnamon powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth (low sodium) - 250 ml
  • Fresh cilantro (for garnish) - a handful

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, combine the dried figs, chopped walnuts, sliced almonds, cinnamon, cumin, ginger, salt, and black pepper. Set aside.
  3. In a skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the skillet and brown on all sides for about 8-10 minutes.
  5. Transfer the chicken and onion mixture to a baking dish. Pour the chicken broth over the chicken and then layer the fig and nut mixture on top.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the figs are soft.
  8. Garnish with fresh cilantro before serving.
