- Dried figs - 200 grams
- Chicken thighs (boneless, skinless) - 250 grams
- Almonds (sliced) - 50 grams
- Walnuts (chopped) - 30 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Cinnamon powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Ginger powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken broth (low sodium) - 250 ml
- Fresh cilantro (for garnish) - a handful
Steps
- Preheat your oven to 180°C (350°F).
- In a large bowl, combine the dried figs, chopped walnuts, sliced almonds, cinnamon, cumin, ginger, salt, and black pepper. Set aside.
- In a skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs to the skillet and brown on all sides for about 8-10 minutes.
- Transfer the chicken and onion mixture to a baking dish. Pour the chicken broth over the chicken and then layer the fig and nut mixture on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the figs are soft.
- Garnish with fresh cilantro before serving.
