  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  3. Stir in the cumin and coriander seeds, cooking for another minute to release their aromas.
  4. Add the sliced fennel, carrot, red bell pepper, and zucchini to the pot, stirring well to combine.
  5. Sprinkle in the paprika, turmeric, salt, and black pepper, mixing thoroughly.
  6. Pour in the vegetable broth, bring the mixture to a gentle simmer, and cover the pot.
  7. Reduce heat to low and allow the tajine to cook for 25 minutes, stirring occasionally until vegetables are tender.
  8. Remove the pot from heat and stir in the chopped cilantro and lemon juice before serving.
