- Chickpeas - 1 can (400g), drained and rinsed
- Tomato paste - 2 tablespoons
- Vegetable broth - 300 ml
- Fresh tarragon - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Heat the olive oil in a tajine or a large skillet over medium heat.
- Add the diced onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrot and cook for 3-4 minutes, stirring occasionally.
- Incorporate the diced zucchini and red bell pepper, and sauté for an additional 5 minutes.
- Mix in the chickpeas, tomato paste, vegetable broth, chopped tarragon, cumin, cinnamon, salt, and black pepper.
- Bring the mixture to a simmer, then cover and reduce the heat to low.
- Cook for 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Remove from heat and let it rest for a few minutes before serving.
- Garnish with fresh cilantro and serve warm.
