Ingredients

  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Bell pepper (red) - 1 medium, chopped
  • Chickpeas (cooked) - 200 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tajine or a deep skillet over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the sliced carrot, diced zucchini, and chopped bell pepper to the pan and sauté for 5-7 minutes, until they begin to soften.
  5. Sprinkle in the turmeric, cumin, cinnamon, salt, and black pepper, stirring to coat the vegetables evenly.
  6. Add the cooked chickpeas and pour in the vegetable broth. Stir well and bring to a simmer.
  7. Cover the tajine or skillet and let it simmer for 15 minutes, allowing the flavors to meld and the vegetables to cook through.
  8. Remove from heat and serve hot, garnished with fresh cilantro.
