- Zucchini - 1 medium, diced
- Bell pepper (red) - 1 medium, chopped
- Chickpeas (cooked) - 200 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a tajine or a deep skillet over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the sliced carrot, diced zucchini, and chopped bell pepper to the pan and sauté for 5-7 minutes, until they begin to soften.
- Sprinkle in the turmeric, cumin, cinnamon, salt, and black pepper, stirring to coat the vegetables evenly.
- Add the cooked chickpeas and pour in the vegetable broth. Stir well and bring to a simmer.
- Cover the tajine or skillet and let it simmer for 15 minutes, allowing the flavors to meld and the vegetables to cook through.
- Remove from heat and serve hot, garnished with fresh cilantro.
