  • Zucchini - 1 medium, diced

  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 200 ml

Steps

  1. In a tajine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper, sliced carrot, and diced zucchini; cook for an additional 5 minutes until the vegetables soften.
  4. Add the chopped tomatoes, cumin, paprika, cinnamon, salt, and black pepper; stir well to combine all ingredients.
  5. Pour in the vegetable broth and bring the mixture to a simmer, allowing it to cook for about 10 minutes to let the flavors meld.
  6. Add the shrimp and cook for another 5-6 minutes, or until the shrimp turn pink and are cooked through.
  7. Stir in the chopped cilantro and lemon juice just before serving.
  8. Serve hot with whole grain couscous or crusty bread.
