- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Vegetable broth - 200 ml
Steps
- In a tajine or a deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced red bell pepper, sliced carrot, and diced zucchini; cook for an additional 5 minutes until the vegetables soften.
- Add the chopped tomatoes, cumin, paprika, cinnamon, salt, and black pepper; stir well to combine all ingredients.
- Pour in the vegetable broth and bring the mixture to a simmer, allowing it to cook for about 10 minutes to let the flavors meld.
- Add the shrimp and cook for another 5-6 minutes, or until the shrimp turn pink and are cooked through.
- Stir in the chopped cilantro and lemon juice just before serving.
- Serve hot with whole grain couscous or crusty bread.
