  • Watercress - 200 grams
  • Chickpeas (cooked) - 150 grams
  • Carrot - 1 large, sliced
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable stock - 300 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large skillet or tajine, heat the olive oil over medium heat.
  2. Add the diced red onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot and cook for another 5 minutes, allowing it to soften slightly.
  4. Add the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper, mixing well to combine all the spices.
  5. Pour in the vegetable stock and bring to a simmer, cooking for about 10 minutes until the carrots are tender.
  6. Add the watercress and lemon juice, stirring gently until the watercress is wilted, about 2-3 minutes.
  7. Remove from heat and garnish with fresh parsley before serving.
