- Watercress - 200 grams
- Chickpeas (cooked) - 150 grams
- Carrot - 1 large, sliced
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable stock - 300 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large skillet or tajine, heat the olive oil over medium heat.
- Add the diced red onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the sliced carrot and cook for another 5 minutes, allowing it to soften slightly.
- Add the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper, mixing well to combine all the spices.
- Pour in the vegetable stock and bring to a simmer, cooking for about 10 minutes until the carrots are tender.
- Add the watercress and lemon juice, stirring gently until the watercress is wilted, about 2-3 minutes.
- Remove from heat and garnish with fresh parsley before serving.
