- Tomato - 1 medium, diced
- Carrot - 1 medium, sliced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Fresh cilantro - 2 tablespoons, chopped
Steps
- In a tajine or a large skillet, heat the olive oil over medium heat.
- Add the diced red onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the sliced carrots and cook for another 5 minutes until they begin to soften.
- Add the diced tomato, sliced zucchini, and cooked chickpeas to the skillet.
- Sprinkle in the ground cumin, ground coriander, paprika, salt, and black pepper, mixing well to combine all ingredients.
- Pour the vegetable broth into the skillet, bring the mixture to a simmer, and then cover with a lid.
- Reduce the heat to low and let it cook for 20-25 minutes, stirring occasionally, until the zucchini is tender and the flavors meld together.
- Once cooked, remove from heat and stir in the fresh cilantro before serving.
