Ingredients

  • Lamb shoulder - 300 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Tomatoes - 2 medium, diced
  • Cinnamon stick - 1
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Water - 250 milliliters

Steps

  1. Heat the olive oil in a tajine or a deep skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat, then add the lamb chunks. Brown the meat on all sides for about 10 minutes.
  4. Stir in the sliced carrot, zucchini, and bell pepper, cooking for an additional 5 minutes.
  5. Add the diced tomatoes, cinnamon stick, cumin, paprika, turmeric, salt, and black pepper. Mix well to combine all the ingredients.
  6. Pour in the water, bringing the mixture to a simmer. Cover the tajine, reduce the heat to low, and let it cook for 60 minutes, stirring occasionally.
  7. After 60 minutes, add the cooked chickpeas and chopped cilantro. Stir gently and let it simmer for another 10-15 minutes until the vegetables are tender.
  8. Remove from heat, squeeze fresh lemon juice over the dish, and let it rest for 5 minutes before serving.
