- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Tomatoes - 2 medium, diced
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Water - 250 milliliters
Steps
- Heat the olive oil in a tajine or a deep skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat, then add the lamb chunks. Brown the meat on all sides for about 10 minutes.
- Stir in the sliced carrot, zucchini, and bell pepper, cooking for an additional 5 minutes.
- Add the diced tomatoes, cinnamon stick, cumin, paprika, turmeric, salt, and black pepper. Mix well to combine all the ingredients.
- Pour in the water, bringing the mixture to a simmer. Cover the tajine, reduce the heat to low, and let it cook for 60 minutes, stirring occasionally.
- After 60 minutes, add the cooked chickpeas and chopped cilantro. Stir gently and let it simmer for another 10-15 minutes until the vegetables are tender.
- Remove from heat, squeeze fresh lemon juice over the dish, and let it rest for 5 minutes before serving.
