- Red bell pepper - 1 medium, diced
- Chickpeas - 1 can (400g), drained and rinsed
- Preserved lemon - 1, pulp removed and rind diced
- Vegetable broth - 300 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet or tajine over medium heat.
- Add the diced onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrots, diced zucchini, and diced red bell pepper to the skillet and sauté for 8-10 minutes until they begin to soften.
- Stir in the chickpeas, diced preserved lemon, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and pepper.
- Bring the mixture to a simmer and cover, cooking for 15 minutes until the vegetables are tender and flavors meld together.
- Remove from heat and stir in the lemon juice.
- Serve hot, garnished with chopped fresh cilantro.
