- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a medium tajine or skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced carrot, red bell pepper, and zucchini to the tajine and cook for 5-7 minutes until they begin to soften.
- Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper, mixing well to combine.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Reduce the heat to low, cover the tajine, and let it cook for 10-15 minutes, stirring occasionally.
- Add the chopped chives and lemon juice, stirring gently to combine, and cook for an additional 5 minutes.
- Remove from heat, garnish with fresh parsley, and serve warm.
