  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a medium tajine or skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced carrot, red bell pepper, and zucchini to the tajine and cook for 5-7 minutes until they begin to soften.
  4. Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, salt, and black pepper, mixing well to combine.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Reduce the heat to low, cover the tajine, and let it cook for 10-15 minutes, stirring occasionally.
  7. Add the chopped chives and lemon juice, stirring gently to combine, and cook for an additional 5 minutes.
  8. Remove from heat, garnish with fresh parsley, and serve warm.
