- Chickpeas - 200 grams, canned and drained

- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 250 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, toasted and slivered
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped green onions and sauté for about 5 minutes until they start to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper to the skillet. Stir well to coat the onions in the spices.
- Pour in the vegetable broth and add the drained chickpeas. Bring the mixture to a gentle simmer.
- Let it cook for 10-15 minutes, allowing the flavors to meld and the liquid to reduce slightly.
- Stir in the chopped dried apricots and lemon juice, and cook for an additional 5 minutes.
- Remove from heat and sprinkle with chopped fresh parsley and toasted slivered almonds before serving.
