  • Green onions - 200 grams, chopped
  • Chickpeas - 200 grams, canned and drained
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Dried apricots - 50 grams, chopped
  • Almonds - 30 grams, toasted and slivered

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped green onions and sauté for about 5 minutes until they start to soften.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper to the skillet. Stir well to coat the onions in the spices.
  4. Pour in the vegetable broth and add the drained chickpeas. Bring the mixture to a gentle simmer.
  5. Let it cook for 10-15 minutes, allowing the flavors to meld and the liquid to reduce slightly.
  6. Stir in the chopped dried apricots and lemon juice, and cook for an additional 5 minutes.
  7. Remove from heat and sprinkle with chopped fresh parsley and toasted slivered almonds before serving.
