  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 ml
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - for garnish

Steps

  1. In a large tajine or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  2. Add the sliced carrots and diced potato to the pot, stirring for about 5 minutes.
  3. Add the chopped cabbage and diced tomato, mixing well with the vegetables.
  4. Stir in the cumin, cinnamon, paprika, salt, and black pepper, cooking for another 2 minutes to release the spices' aroma.
  5. Pour in the vegetable broth, ensuring all vegetables are covered. Bring to a boil.
  6. Reduce the heat to low, cover the tajine, and let it simmer for about 30 minutes, or until the vegetables are tender.
  7. Add the cooked chickpeas and stir gently to combine. Cook for an additional 5 minutes to heat through.
  8. Remove from heat and garnish with fresh parsley before serving.
