Ingredients

  • Cauliflower - 1 medium head, cut into florets
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Chickpeas - 100 grams, cooked
  • Raisins - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the spices: cumin, coriander, paprika, turmeric, salt, and black pepper, and cook for 1-2 minutes to release their aromas.
  5. Add the cauliflower florets to the skillet, tossing them in the spice mixture to coat evenly.
  6. Pour in the vegetable broth, cover the skillet, and let it simmer for about 10 minutes until the cauliflower is slightly tender.
  7. Stir in the cooked chickpeas and raisins, and mix well.
  8. Transfer the mixture to a baking dish, cover it with foil, and bake in the preheated oven for 25 minutes.
  9. Remove the foil, bake for an additional 10 minutes until the cauliflower is golden and slightly crispy.
  10. Once done, remove from the oven and drizzle with lemon juice and sprinkle with fresh parsley before serving.
