- Cauliflower - 1 medium head, cut into florets

- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Chickpeas - 100 grams, cooked
- Raisins - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the spices: cumin, coriander, paprika, turmeric, salt, and black pepper, and cook for 1-2 minutes to release their aromas.
- Add the cauliflower florets to the skillet, tossing them in the spice mixture to coat evenly.
- Pour in the vegetable broth, cover the skillet, and let it simmer for about 10 minutes until the cauliflower is slightly tender.
- Stir in the cooked chickpeas and raisins, and mix well.
- Transfer the mixture to a baking dish, cover it with foil, and bake in the preheated oven for 25 minutes.
- Remove the foil, bake for an additional 10 minutes until the cauliflower is golden and slightly crispy.
- Once done, remove from the oven and drizzle with lemon juice and sprinkle with fresh parsley before serving.
