- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Tomato - 1 large, diced
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Chickpeas - 100 grams, cooked
- Raisins - 50 grams
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large tajine or deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced carrot, zucchini, and red bell pepper; cook for another 5 minutes, stirring occasionally.
- Mix in the diced tomato, cauliflower florets, cumin, cinnamon, paprika, turmeric, salt, and black pepper.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the tajine (or skillet) and let it cook for about 20 minutes, or until the cauliflower and vegetables are tender.
- Add the cooked chickpeas and raisins, stirring gently to combine, and cook for another 5 minutes.
- Remove from heat and let it rest for a few minutes before serving.
- Garnish with fresh cilantro and serve warm over couscous or bread.
