Ingredients

  • Green cabbage - 300 grams, chopped
  • Chickpeas - 200 grams, cooked
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large tajine or pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent.
  2. Add the sliced carrot and diced potato, stirring for about 5 minutes until they start to soften.
  3. Stir in the chopped cabbage and cook for another 5 minutes, allowing it to wilt slightly.
  4. Add the cooked chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
  5. Cover the tajine or pot, reduce heat to low, and let it simmer for about 25-30 minutes, stirring occasionally, until the vegetables are tender.
  6. Once cooked, garnish with fresh parsley before serving.
