- Green cabbage - 300 grams, chopped
- Chickpeas - 200 grams, cooked
- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large tajine or pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent.
- Add the sliced carrot and diced potato, stirring for about 5 minutes until they start to soften.
- Stir in the chopped cabbage and cook for another 5 minutes, allowing it to wilt slightly.
- Add the cooked chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
- Cover the tajine or pot, reduce heat to low, and let it simmer for about 25-30 minutes, stirring occasionally, until the vegetables are tender.
- Once cooked, garnish with fresh parsley before serving.
