- dark chocolate (70% cocoa) - 100g
- coconut milk - 200ml
- maple syrup - 2 tablespoons
- ground cinnamon - 1 teaspoon
- ground ginger - 1/2 teaspoon
- ground cardamom - 1/4 teaspoon
- chopped walnuts - 50g
- dried apricots, chopped - 50g
- vanilla extract - 1 teaspoon
- sea salt - a pinch
Steps
- In a small saucepan, heat the coconut milk over low heat until warm but not boiling.
- Add the dark chocolate to the warm coconut milk and stir until fully melted and combined.
- Stir in the maple syrup, ground cinnamon, ground ginger, ground cardamom, vanilla extract, and a pinch of sea salt.
- Remove from heat and fold in the chopped walnuts and dried apricots.
- Pour the mixture into a tajine or a small baking dish and let it cool at room temperature for 10-15 minutes.
- Refrigerate for at least 1 hour to set before serving.
- Serve chilled or at room temperature, garnished with extra chopped walnuts or a sprinkle of cinnamon if desired.
