Ingredients

  • dark chocolate (70% cocoa) - 100g
  • coconut milk - 200ml
  • maple syrup - 2 tablespoons
  • ground cinnamon - 1 teaspoon
  • ground ginger - 1/2 teaspoon
  • ground cardamom - 1/4 teaspoon
  • chopped walnuts - 50g
  • dried apricots, chopped - 50g
  • vanilla extract - 1 teaspoon
  • sea salt - a pinch

Steps

  1. In a small saucepan, heat the coconut milk over low heat until warm but not boiling.
  2. Add the dark chocolate to the warm coconut milk and stir until fully melted and combined.
  3. Stir in the maple syrup, ground cinnamon, ground ginger, ground cardamom, vanilla extract, and a pinch of sea salt.
  4. Remove from heat and fold in the chopped walnuts and dried apricots.
  5. Pour the mixture into a tajine or a small baking dish and let it cool at room temperature for 10-15 minutes.
  6. Refrigerate for at least 1 hour to set before serving.
  7. Serve chilled or at room temperature, garnished with extra chopped walnuts or a sprinkle of cinnamon if desired.
