- Garlic, minced - 2 cloves
- Mushrooms, sliced (button or cremini) - 300g
- Carrot, sliced - 1 medium (about 70g)
- Bell pepper, chopped - 1 medium (about 150g)
- Zucchini, sliced - 1 medium (about 150g)
- Canned chickpeas, drained and rinsed - 200g
- Vegetable broth - 250ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - for garnish
Steps
- Heat olive oil in a tajine or large skillet over medium heat.
- Add the chopped onion and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced mushrooms and cook until they begin to release their moisture, about 5 minutes.
- Incorporate the sliced carrot, bell pepper, and zucchini, and cook for an additional 5 minutes, stirring occasionally.
- Add the drained chickpeas, vegetable broth, and all the spices (cumin, coriander, cinnamon, paprika, salt, and pepper).
- Bring to a simmer, cover, and reduce heat to low. Let it cook for 15-20 minutes until the vegetables are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped fresh parsley.
