Ingredients

  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (about 150g)
  • Garlic, minced - 2 cloves
  • Mushrooms, sliced (button or cremini) - 300g
  • Carrot, sliced - 1 medium (about 70g)
  • Bell pepper, chopped - 1 medium (about 150g)
  • Zucchini, sliced - 1 medium (about 150g)
  • Canned chickpeas, drained and rinsed - 200g
  • Vegetable broth - 250ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. Heat olive oil in a tajine or large skillet over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced mushrooms and cook until they begin to release their moisture, about 5 minutes.
  5. Incorporate the sliced carrot, bell pepper, and zucchini, and cook for an additional 5 minutes, stirring occasionally.
  6. Add the drained chickpeas, vegetable broth, and all the spices (cumin, coriander, cinnamon, paprika, salt, and pepper).
  7. Bring to a simmer, cover, and reduce heat to low. Let it cook for 15-20 minutes until the vegetables are tender.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with chopped fresh parsley.
