Ingredients

  • Shallots - 300 grams

  • Cinnamon powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable broth - 200 milliliters
  • Dried apricots - 50 grams, chopped
  • Chickpeas - 200 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Couscous - 150 grams

Steps

  1. Peel and slice the shallots into thin rounds.
  2. In a tajine or a deep skillet, heat the olive oil over medium heat.
  3. Add the sliced shallots and sauté until they start to caramelize, about 10 minutes.
  4. Stir in the minced garlic, cumin, cinnamon, and turmeric, cooking for another 2 minutes until fragrant.
  5. Add the chopped dried apricots and cooked chickpeas, then pour in the vegetable broth.
  6. Season with salt and black pepper to taste, and bring to a simmer.
  7. Cover and let it cook for about 15 minutes, allowing the flavors to meld.
  8. While the tajine is cooking, prepare the couscous according to package instructions.
  9. Once the tajine is ready, fluff the couscous with a fork and serve topped with the shallot mixture and sprinkled with fresh parsley.
