- Dried apricots - 50 grams, chopped
- Chickpeas - 200 grams, cooked
- Fresh parsley - 2 tablespoons, chopped

- Couscous - 150 grams
Steps
- Peel and slice the shallots into thin rounds.
- In a tajine or a deep skillet, heat the olive oil over medium heat.
- Add the sliced shallots and sauté until they start to caramelize, about 10 minutes.
- Stir in the minced garlic, cumin, cinnamon, and turmeric, cooking for another 2 minutes until fragrant.
- Add the chopped dried apricots and cooked chickpeas, then pour in the vegetable broth.

- While the tajine is cooking, prepare the couscous according to package instructions.
