  • Carrots - 1 large, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 large, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a tajine or a deep oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the goat meat to the pan, browning it on all sides for about 5-7 minutes.
  4. Stir in the sliced carrots, zucchini, bell pepper, and diced tomato, mixing well.
  5. Season with cumin, coriander, paprika, salt, and black pepper, ensuring the meat and vegetables are coated evenly.
  6. Pour in the water and bring the mixture to a simmer.
  7. Cover the tajine with its lid or aluminum foil and transfer it to the preheated oven.
  8. Bake for 60 minutes, then remove from the oven and stir in the chopped fresh parsley and cilantro.
  9. Return the tajine to the oven and bake for an additional 15 minutes.
  10. Serve hot, garnished with extra herbs if desired.
