- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a tajine or a deep oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the goat meat to the pan, browning it on all sides for about 5-7 minutes.
- Stir in the sliced carrots, zucchini, bell pepper, and diced tomato, mixing well.
- Season with cumin, coriander, paprika, salt, and black pepper, ensuring the meat and vegetables are coated evenly.
- Pour in the water and bring the mixture to a simmer.
- Cover the tajine with its lid or aluminum foil and transfer it to the preheated oven.
- Bake for 60 minutes, then remove from the oven and stir in the chopped fresh parsley and cilantro.
- Return the tajine to the oven and bake for an additional 15 minutes.
