- Zucchini (sliced) - 1 medium
- Bell pepper (diced) - 1 medium
- Chickpeas (cooked) - 100 grams
- Tomato (chopped) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 500 milliliters
- Lemon (for garnish) - 1
Steps
- In a tajine or heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the goat meat to the pot, browning it on all sides for about 5-7 minutes.
- Stir in the carrot, zucchini, and bell pepper, cooking for another 5 minutes.
- Add the chickpeas, chopped tomato, cilantro, cinnamon stick, cumin, paprika, salt, and black pepper. Stir well to combine.
- Pour in the water, ensuring the meat and vegetables are submerged. Bring to a boil, then reduce the heat to low.
- Cover the pot and let it simmer gently for about 1.5 hours, or until the goat meat is tender.
- Once cooked, remove the cinnamon stick and adjust seasoning if needed.
- Serve hot, garnished with fresh lemon wedges.
