  • Chickpeas (canned, drained) - 100 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish
  • Lemon - 1, juiced

Steps

  1. Heat olive oil in a tajine or a deep skillet over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent, about 5 minutes.
  3. Stir in the sliced carrots and cook for another 5 minutes, stirring occasionally.
  4. Add the cooked chestnuts and chickpeas to the pot, mixing well.
  5. Sprinkle in the cinnamon, cumin, coriander, salt, and black pepper; stir to combine.
  6. Pour in the vegetable broth, bring to a gentle simmer, and cover the pot.
  7. Allow to cook for about 20 minutes, until the carrots are tender.
