- Vegetable broth - 250 ml

- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Maple syrup - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic, cinnamon, cumin, and ginger. Cook for another minute until fragrant.
- Add the pitted cherries to the pan, along with the maple syrup, salt, and pepper. Stir well and let cook for about 5-7 minutes until the cherries soften and release their juices.
- Meanwhile, in a separate pot, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let sit for 5 minutes to absorb the liquid.
- Fluff the couscous with a fork and drizzle with the remaining tablespoon of olive oil. Mix in chopped parsley.
- Serve the cherry mixture over the couscous, garnishing with extra parsley if desired.
