Ingredients

  • Carrots - 400 grams, peeled and cut into sticks
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Green olives - 100 grams, pitted and sliced
  • Preserved lemon - 1, pulp removed and rind finely chopped
  • Fresh cilantro - a handful, chopped for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the carrot sticks to the pan, stirring to coat them with the onion mixture.
  4. Sprinkle in the ground cumin, coriander, turmeric, and cinnamon, stirring well to combine all the spices with the carrots.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, or until the carrots are tender.
  6. Add the sliced olives and preserved lemon rind, stirring gently to combine. Season with salt and black pepper to taste.
  7. Cook for an additional 5 minutes uncovered, allowing the flavors to meld.
  8. Serve hot, garnished with fresh cilantro.
