- Carrots - 400 grams, peeled and cut into sticks

- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Vegetable broth - 250 ml
- Green olives - 100 grams, pitted and sliced
- Preserved lemon - 1, pulp removed and rind finely chopped
- Fresh cilantro - a handful, chopped for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the carrot sticks to the pan, stirring to coat them with the onion mixture.
- Sprinkle in the ground cumin, coriander, turmeric, and cinnamon, stirring well to combine all the spices with the carrots.
- Pour in the vegetable broth and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, or until the carrots are tender.
- Add the sliced olives and preserved lemon rind, stirring gently to combine. Season with salt and black pepper to taste.
- Cook for an additional 5 minutes uncovered, allowing the flavors to meld.
- Serve hot, garnished with fresh cilantro.
