  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced carrots, cumin, coriander, paprika, salt, and black pepper to the pot, mixing well to coat the carrots with the spices.
  5. Pour in the water and bring the mixture to a gentle simmer.
  6. Cover the tajine and let it cook for about 15 minutes, stirring occasionally, until the carrots are tender.
  7. Remove from heat and stir in the chopped parsley and lemon juice.
