Ingredients

  • Olive oil - 2 tablespoons

  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chickpeas - 240 grams, canned, drained and rinsed
  • Diced tomatoes - 400 grams, canned
  • Vegetable broth - 250 ml
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped for garnish

Steps

  1. In a large pan or tajine, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the diced carrot, zucchini, and bell pepper to the pan, cooking for about 5-7 minutes until they start to soften.
  5. Stir in the chickpeas, diced tomatoes, vegetable broth, cinnamon, cumin, coriander, salt, and black pepper.
  6. Bring the mixture to a simmer, cover, and reduce the heat to low. Cook for 20 minutes, stirring occasionally.
  7. Once the vegetables are tender and the flavors have melded, remove from heat.
  8. Serve hot, garnished with fresh cilantro.
