- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Chickpeas - 240 grams, canned, drained and rinsed
- Diced tomatoes - 400 grams, canned
- Vegetable broth - 250 ml
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped for garnish
Steps
- In a large pan or tajine, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the diced carrot, zucchini, and bell pepper to the pan, cooking for about 5-7 minutes until they start to soften.
- Stir in the chickpeas, diced tomatoes, vegetable broth, cinnamon, cumin, coriander, salt, and black pepper.
- Bring the mixture to a simmer, cover, and reduce the heat to low. Cook for 20 minutes, stirring occasionally.
- Once the vegetables are tender and the flavors have melded, remove from heat.
- Serve hot, garnished with fresh cilantro.
