- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Honey - 1 tablespoon
- Chicken stock - 250 ml
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a tajine or a large, heavy-bottomed pot over medium heat.
- Season the duck legs with salt and pepper, then add them to the pot, browning on all sides for about 5-7 minutes.
- Remove the duck legs and set them aside. In the same pot, add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.
- Stir in the ground cinnamon, cumin, and ginger, cooking for another minute to toast the spices.
- Return the duck legs to the pot, add the honey, and pour in the chicken stock, ensuring the duck is mostly submerged.
- Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it cook for about 60 minutes.
- After 60 minutes, add the fresh figs to the pot, stirring gently to combine.
- Cover again and cook for an additional 15-20 minutes until the duck is tender and the figs have softened.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
