Ingredients

  • Duck legs - 2 pieces
  • Fresh figs - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Chicken stock - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tajine or a large, heavy-bottomed pot over medium heat.
  2. Season the duck legs with salt and pepper, then add them to the pot, browning on all sides for about 5-7 minutes.
  3. Remove the duck legs and set them aside. In the same pot, add the chopped onion and minced garlic, sautéing until softened and fragrant, about 5 minutes.
  4. Stir in the ground cinnamon, cumin, and ginger, cooking for another minute to toast the spices.
  5. Return the duck legs to the pot, add the honey, and pour in the chicken stock, ensuring the duck is mostly submerged.
  6. Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it cook for about 60 minutes.
  7. After 60 minutes, add the fresh figs to the pot, stirring gently to combine.
  8. Cover again and cook for an additional 15-20 minutes until the duck is tender and the figs have softened.
  9. Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
