- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 250ml
- Cinnamon stick - 1 piece
- Ground cumin - 1 teaspoon
- Ground ginger - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Almonds - 30g, toasted and chopped
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Season the duck legs with salt and black pepper, then brown them in the pot for about 5-7 minutes on each side until golden.
- Remove the duck legs and set aside. In the same pot, add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the ground cumin, ginger, and coriander, cooking for an additional minute until fragrant.
- Return the duck legs to the pot, add the chopped dried apricots, cinnamon stick, and chicken broth.
- Bring to a simmer, cover, and reduce the heat to low. Let it cook for about 1 hour and 15 minutes, or until the duck is tender and the flavors meld.
- Remove the lid and let it simmer for an additional 10-15 minutes to thicken the sauce if desired.
- Serve hot, garnished with toasted almonds and fresh cilantro.
