  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Coffee - 100 ml, brewed strong
  • Vegetable broth - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a medium-sized tajine or a skillet over medium heat.
  2. Add the diced red onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and sliced carrot, cooking for another 2-3 minutes.
  4. Add the diced zucchini and red bell pepper, cooking for an additional 5 minutes until slightly softened.
  5. Stir in the cooked chickpeas, ground cumin, ground cinnamon, ground ginger, and cayenne pepper, mixing well.
  6. Pour in the brewed coffee and vegetable broth, then season with salt and black pepper to taste.
  7. Reduce the heat to low, cover the tajine or skillet, and let simmer for 10-15 minutes, allowing the flavors to meld.
  8. Remove from heat and garnish with fresh parsley before serving.
