- Chickpeas - 200 grams, cooked
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Coffee - 100 ml, brewed strong
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a medium-sized tajine or a skillet over medium heat.
- Add the diced red onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and sliced carrot, cooking for another 2-3 minutes.
- Add the diced zucchini and red bell pepper, cooking for an additional 5 minutes until slightly softened.
- Stir in the cooked chickpeas, ground cumin, ground cinnamon, ground ginger, and cayenne pepper, mixing well.
- Pour in the brewed coffee and vegetable broth, then season with salt and black pepper to taste.
- Reduce the heat to low, cover the tajine or skillet, and let simmer for 10-15 minutes, allowing the flavors to meld.
- Remove from heat and garnish with fresh parsley before serving.
