  • Nopal cactus pads - 200 grams
  • Zucchini - 1 medium (about 200 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Onion - 1 medium (about 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Fresh cilantro - 2 tablespoons (chopped)

Steps

  1. Prepare the cactus pads by rinsing them thoroughly, then using a sharp knife to remove the spines and edges. Cut the pads into strips.
  2. In a large skillet or tajine, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the cactus strips, zucchini, and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  5. Add the ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the vegetables with the spices.
  6. Pour in the vegetable broth and bring to a simmer. Cover the skillet or tajine and let it cook for 15-20 minutes, or until the cactus and vegetables are tender.
  7. Remove from heat and stir in the chopped cilantro before serving.
