- Zucchini - 1 medium (about 200 grams)
- Red bell pepper - 1 medium (about 150 grams)
- Onion - 1 medium (about 100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Fresh cilantro - 2 tablespoons (chopped)
Steps
- Prepare the cactus pads by rinsing them thoroughly, then using a sharp knife to remove the spines and edges. Cut the pads into strips.
- In a large skillet or tajine, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the cactus strips, zucchini, and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Add the ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the vegetables with the spices.
- Pour in the vegetable broth and bring to a simmer. Cover the skillet or tajine and let it cook for 15-20 minutes, or until the cactus and vegetables are tender.
- Remove from heat and stir in the chopped cilantro before serving.
