  • Lamb chops - 400 grams

  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Tomato - 1 large, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Water - 250 ml

Steps

  1. Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped onions and sauté until they are translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Season the lamb chops with salt, black pepper, cumin, coriander, paprika, and cinnamon.
  5. Add the seasoned lamb chops to the pot and brown them on both sides for about 5-7 minutes.
  6. Add the sliced carrot, diced zucchini, and chopped tomato to the pot, stirring to combine.
  7. Pour in 250 ml of water and bring to a simmer.
  8. Cover the pot and reduce the heat to low, cooking for 40-45 minutes until the lamb is tender.
  9. Once cooked, sprinkle with fresh parsley before serving.
