- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Tomato - 1 large, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Water - 250 ml
Steps
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Season the lamb chops with salt, black pepper, cumin, coriander, paprika, and cinnamon.
- Add the seasoned lamb chops to the pot and brown them on both sides for about 5-7 minutes.
- Add the sliced carrot, diced zucchini, and chopped tomato to the pot, stirring to combine.
- Pour in 250 ml of water and bring to a simmer.
- Cover the pot and reduce the heat to low, cooking for 40-45 minutes until the lamb is tender.
- Once cooked, sprinkle with fresh parsley before serving.
