- Tomato - 1 medium, diced
- Vegetable broth - 300ml
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon

- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium-sized pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic to the pot, sauté until translucent, about 3-4 minutes.
- Stir in the diced red bell pepper, zucchini, and carrot, cooking for another 5 minutes until softened.
- Add the diced tomato, cumin, coriander, paprika, turmeric, salt, and black pepper, stirring well to combine.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Stir in the bulgur wheat, cover the pot, and reduce the heat to low, cooking for about 15 minutes or until the bulgur is tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit for 5 minutes, covered.
