  • Bulgur wheat - 100g

  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 300ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium-sized pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic to the pot, sauté until translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper, zucchini, and carrot, cooking for another 5 minutes until softened.
  4. Add the diced tomato, cumin, coriander, paprika, turmeric, salt, and black pepper, stirring well to combine.
  5. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  6. Stir in the bulgur wheat, cover the pot, and reduce the heat to low, cooking for about 15 minutes or until the bulgur is tender and the liquid is absorbed.
  7. Once cooked, remove from heat and let it sit for 5 minutes, covered.
  8. Fluff the bulgur with a fork and garnish with fresh parsley before serving.
