  • Cherry tomatoes - 150 grams, halved
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Fresh basil - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Lemon - 1, zested and juiced

Steps

  1. In a large skillet or tajine, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the diced zucchini, sliced carrot, and diced red bell pepper, cooking for about 5 minutes until they begin to soften.
  4. Add the halved cherry tomatoes and canned chickpeas to the skillet, mixing well.
  5. Sprinkle in the ground cumin, ground coriander, paprika, salt, and black pepper, stirring to combine all the spices evenly.
  6. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  7. Cover the skillet or tajine and cook for 10-15 minutes, allowing the vegetables to become tender and the flavors to meld.
  8. Remove the lid, stir in the chopped fresh basil, lemon zest, and lemon juice. Cook for an additional 2-3 minutes.
