- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 milliliters
- Lemon - 1, zested and juiced
Steps
- In a large skillet or tajine, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the diced zucchini, sliced carrot, and diced red bell pepper, cooking for about 5 minutes until they begin to soften.
- Add the halved cherry tomatoes and canned chickpeas to the skillet, mixing well.
- Sprinkle in the ground cumin, ground coriander, paprika, salt, and black pepper, stirring to combine all the spices evenly.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Cover the skillet or tajine and cook for 10-15 minutes, allowing the vegetables to become tender and the flavors to meld.
- Remove the lid, stir in the chopped fresh basil, lemon zest, and lemon juice. Cook for an additional 2-3 minutes.
