- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Water - 500 ml
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the beef cubes, browning them on all sides for about 5-7 minutes.
- Stir in the cumin, ginger, turmeric, cinnamon stick, salt, and black pepper, mixing well.
- Add the sliced carrot and diced potato, followed by the prunes, and stir to combine.
- Pour in the water, bringing the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for about 1 hour, or until the beef is tender.
- Check occasionally, adding more water if needed to prevent sticking.
- Once the beef is tender, remove the cinnamon stick and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
