  • Prunes - 100 grams, pitted
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Cinnamon stick - 1
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 ml
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the beef cubes, browning them on all sides for about 5-7 minutes.
  4. Stir in the cumin, ginger, turmeric, cinnamon stick, salt, and black pepper, mixing well.
  5. Add the sliced carrot and diced potato, followed by the prunes, and stir to combine.
  6. Pour in the water, bringing the mixture to a boil.
  7. Reduce the heat to low, cover, and let it simmer for about 1 hour, or until the beef is tender.
  8. Check occasionally, adding more water if needed to prevent sticking.
  9. Once the beef is tender, remove the cinnamon stick and adjust seasoning if necessary.
  10. Serve hot, garnished with fresh cilantro.
