  • Carrot, diced - 1 medium (70 grams)
  • Tomato, diced - 1 medium (100 grams)
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
  3. Add the diced carrot and sauté for an additional 3-4 minutes until slightly softened.
  4. Increase the heat to medium-high and add the beef stew meat, browning it on all sides for about 5-7 minutes.
  5. Stir in the diced tomato, fava beans, cumin, paprika, cinnamon, salt, and black pepper. Mix well to coat the beef and vegetables with the spices.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Cover the tagine with its lid (or use aluminum foil if using a Dutch oven) and transfer it to the preheated oven.
  8. Bake for 40 minutes, until the beef is tender and the flavors are well combined.
