- Vegetable broth - 250 milliliters
- Fresh cilantro, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
- Add the diced carrot and sauté for an additional 3-4 minutes until slightly softened.
- Increase the heat to medium-high and add the beef stew meat, browning it on all sides for about 5-7 minutes.
- Stir in the diced tomato, fava beans, cumin, paprika, cinnamon, salt, and black pepper. Mix well to coat the beef and vegetables with the spices.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the tagine with its lid (or use aluminum foil if using a Dutch oven) and transfer it to the preheated oven.
- Bake for 40 minutes, until the beef is tender and the flavors are well combined.
- Remove from the oven and stir in the chopped cilantro and lemon juice before serving.
