  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large oven-safe pot or tajine, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes.
  4. Sprinkle the ground cumin, cinnamon, ginger, cayenne pepper, salt, and black pepper over the beef. Stir to coat the meat evenly with the spices.
  5. Add the sliced carrots and vegetable broth to the pot. Stir everything together and bring to a simmer.
  6. Cover the pot with a lid and transfer to the preheated oven. Bake for 1 hour, or until the beef is tender and the flavors have melded.
  7. Once cooked, remove from the oven and stir in the chopped fresh parsley before serving. Adjust seasoning if necessary.
