- Onion - 1 medium (about 100 grams), chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 160°C (320°F).
- In a large oven-safe pot or tajine, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes.
- Sprinkle the ground cumin, cinnamon, ginger, cayenne pepper, salt, and black pepper over the beef. Stir to coat the meat evenly with the spices.
- Add the sliced carrots and vegetable broth to the pot. Stir everything together and bring to a simmer.
- Cover the pot with a lid and transfer to the preheated oven. Bake for 1 hour, or until the beef is tender and the flavors have melded.
- Once cooked, remove from the oven and stir in the chopped fresh parsley before serving. Adjust seasoning if necessary.
