Ingredients

  • Beef chuck - 300 grams, cut into 2.5 cm cubes
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Almonds - 50 grams, blanched
  • Carrot - 1 large, sliced
  • Prunes - 100 grams, pitted and chopped
  • Cinnamon stick - 1
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Ginger - 1 teaspoon, grated
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Fresh coriander - for garnish

Steps

  1. In a large tajine or heavy pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  3. Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 5-7 minutes.
  4. Stir in the ground cumin, ground coriander, turmeric, cinnamon stick, salt, and black pepper, mixing well to coat the meat in the spices.
  5. Add the sliced carrot, chopped prunes, and water, bringing the mixture to a gentle boil.
  6. Reduce the heat to low, cover the tajine, and let it simmer for about 1 hour, stirring occasionally.
  7. After 1 hour, check the meat; it should be tender. If necessary, add a bit more water and continue cooking until the beef is very tender, about 30 more minutes.
  8. In a small dry skillet, toast the almonds over medium heat until golden brown, about 5 minutes, stirring frequently to prevent burning.
  9. Once the beef is cooked, remove the tajine from heat and let it rest for a few minutes. Garnish with the toasted almonds and fresh coriander before serving.
