Ingredients
- Beef chuck - 300 grams, cut into 2.5 cm cubes
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Almonds - 50 grams, blanched
- Carrot - 1 large, sliced
- Prunes - 100 grams, pitted and chopped
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Ginger - 1 teaspoon, grated
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Fresh coriander - for garnish
Steps
- In a large tajine or heavy pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
- Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 5-7 minutes.
- Stir in the ground cumin, ground coriander, turmeric, cinnamon stick, salt, and black pepper, mixing well to coat the meat in the spices.
- Add the sliced carrot, chopped prunes, and water, bringing the mixture to a gentle boil.
- Reduce the heat to low, cover the tajine, and let it simmer for about 1 hour, stirring occasionally.
- After 1 hour, check the meat; it should be tender. If necessary, add a bit more water and continue cooking until the beef is very tender, about 30 more minutes.
- In a small dry skillet, toast the almonds over medium heat until golden brown, about 5 minutes, stirring frequently to prevent burning.
- Once the beef is cooked, remove the tajine from heat and let it rest for a few minutes. Garnish with the toasted almonds and fresh coriander before serving.
