Ingredients

  • Beef stew meat - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Beef broth - 250 ml
  • Fresh cilantro - for garnish

Steps

  1. In a large tajine or heavy pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the beef stew meat, browning it on all sides for about 5-7 minutes.
  4. Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes.
  5. Add the diced tomato along with cumin, coriander, paprika, cinnamon, salt, and black pepper, stirring to combine.
  6. Pour in the beef broth, bringing the mixture to a simmer.
  7. Cover the tajine or pot, reduce the heat to low, and let it cook for about 40 minutes, or until the beef is tender.
  8. Once cooked, taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh cilantro.
