- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Beef broth - 250 ml
- Fresh cilantro - for garnish
Steps
- In a large tajine or heavy pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the beef stew meat, browning it on all sides for about 5-7 minutes.
- Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes.
- Add the diced tomato along with cumin, coriander, paprika, cinnamon, salt, and black pepper, stirring to combine.
- Pour in the beef broth, bringing the mixture to a simmer.
- Cover the tajine or pot, reduce the heat to low, and let it cook for about 40 minutes, or until the beef is tender.
- Once cooked, taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
