  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters

  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium-sized tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté for 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrots, zucchini, and bell pepper, and sauté for 5-7 minutes until the vegetables begin to soften.
  5. Incorporate the cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper, mixing well to coat the vegetables.
  6. Pour in the vegetable broth, bring to a gentle simmer, and cover the tajine or pot.
  7. Reduce the heat to low and let it cook for 15 minutes, allowing the flavors to meld together.
  8. Stir in the chopped fresh dill just before serving, adjusting seasoning if necessary.
  9. Serve hot, garnished with additional dill if desired.
