- Chickpeas - 200 grams, cooked and drained
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 200 ml
- Fresh cilantro - 2 tablespoons, chopped
- Almonds - 30 grams, slivered
Steps
- In a tajine or a deep skillet, heat the olive oil over medium heat.
- Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Stir in the ground cinnamon, cumin, ginger, turmeric, salt, and black pepper, and cook for an additional minute to toast the spices.
- Add the diced pineapple and chickpeas to the skillet, mixing well to combine with the spices.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Reduce the heat to low, cover, and let it cook for about 20 minutes, stirring occasionally.
- Once the sauce has thickened and the flavors melded, remove from heat and stir in the chopped cilantro.
- Serve the tajine warm, garnished with slivered almonds.
