  • Pineapple - 300 grams, peeled and diced
  • Chickpeas - 200 grams, cooked and drained
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Almonds - 30 grams, slivered

Steps

  1. In a tajine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped red onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the ground cinnamon, cumin, ginger, turmeric, salt, and black pepper, and cook for an additional minute to toast the spices.
  4. Add the diced pineapple and chickpeas to the skillet, mixing well to combine with the spices.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Reduce the heat to low, cover, and let it cook for about 20 minutes, stirring occasionally.
  7. Once the sauce has thickened and the flavors melded, remove from heat and stir in the chopped cilantro.
  8. Serve the tajine warm, garnished with slivered almonds.
