- Carrots - 2 medium, sliced
- Zucchini - 1 medium, chopped
- Red bell pepper - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Vegetable broth - 250 ml
- Almonds - 50 grams, slivered
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large skillet or tajine, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
- Stir in the sliced carrots, chopped zucchini, and diced red bell pepper, and cook for another 5 minutes.
- Add the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables.
- Pour in the vegetable broth, cover, and let simmer for about 15 minutes, or until the vegetables are tender.
- While the vegetables are cooking, toast the slivered almonds in a dry pan over medium heat until golden brown, about 3-4 minutes.
- Once the vegetables are tender, remove from heat and serve in bowls, topped with toasted almonds and fresh cilantro.
