Ingredients

  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, chopped
  • Red bell pepper - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 250 ml
  • Almonds - 50 grams, slivered
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large skillet or tajine, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened, about 3-4 minutes.
  3. Stir in the sliced carrots, chopped zucchini, and diced red bell pepper, and cook for another 5 minutes.
  4. Add the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables.
  5. Pour in the vegetable broth, cover, and let simmer for about 15 minutes, or until the vegetables are tender.
  6. While the vegetables are cooking, toast the slivered almonds in a dry pan over medium heat until golden brown, about 3-4 minutes.
  7. Once the vegetables are tender, remove from heat and serve in bowls, topped with toasted almonds and fresh cilantro.
