Ingredients

  • Dried apricots - 150 grams
  • Chickpeas (cooked) - 100 grams
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Vegetable broth - 300 ml
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium tajine or deep skillet, heat olive oil over medium heat. Add diced red onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic, sliced carrot, and diced zucchini. Cook for another 5 minutes until the vegetables are slightly tender.
  3. Add the cooked chickpeas, dried apricots, vegetable broth, cinnamon, cumin, turmeric, salt, and black pepper. Stir to combine all ingredients.
  4. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 20 minutes, stirring occasionally.
  5. Once cooked, taste and adjust seasoning if necessary. Remove from heat and let it sit covered for a few minutes.
  6. Serve warm, garnished with fresh cilantro.
