Ingredients

  • Lamb liver - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. Clean the lamb liver thoroughly and cut it into bite-sized pieces.
  2. In a bowl, mix the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, chopped parsley, and lemon juice to create a marinade.
  3. Add the liver pieces to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  4. Preheat a grill or grilling pan over medium-high heat.
  5. Thread the marinated liver pieces onto the skewers.
  6. Grill the skewers for about 8-10 minutes, turning occasionally until the liver is cooked to your liking and has a nice char.
  7. Remove from the grill and let rest for a few minutes before serving.
