- Lamb liver - 300 grams

- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- Clean the lamb liver thoroughly and cut it into bite-sized pieces.
- In a bowl, mix the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, chopped parsley, and lemon juice to create a marinade.
- Add the liver pieces to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
- Preheat a grill or grilling pan over medium-high heat.
- Thread the marinated liver pieces onto the skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally until the liver is cooked to your liking and has a nice char.
- Remove from the grill and let rest for a few minutes before serving.
