  • Cauliflower - 500 grams, riced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Chickpeas - 100 grams, cooked (optional)
  • Green olives - 50 grams, pitted and sliced

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the riced cauliflower, cumin, paprika, turmeric, salt, and black pepper. Mix well to combine all the spices.
  4. Cover the skillet and let the mixture cook for about 10 minutes, stirring occasionally until the cauliflower is tender.
  5. If using, fold in the cooked chickpeas and mix until heated through.
  6. Remove from heat and stir in the chopped parsley and lemon juice.
  7. Top with sliced green olives before serving. Enjoy warm.
