- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Chickpeas - 100 grams, cooked (optional)
- Green olives - 50 grams, pitted and sliced
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the riced cauliflower, cumin, paprika, turmeric, salt, and black pepper. Mix well to combine all the spices.
- Cover the skillet and let the mixture cook for about 10 minutes, stirring occasionally until the cauliflower is tender.
- If using, fold in the cooked chickpeas and mix until heated through.
- Remove from heat and stir in the chopped parsley and lemon juice.
