- Ground cumin - 1 teaspoon
- Ground paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato, chopped - 1 medium
- Fresh parsley, chopped - 2 tablespoons
- Fresh coriander, chopped - 2 tablespoons
- Okra, trimmed - 200 grams
- Water - 300 milliliters
Steps
- Preheat your oven to 180°C (350°F).
- In a tagine or a deep oven-safe pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the cubed meat to the pot and brown on all sides, about 5-7 minutes.
- Sprinkle in the ground cumin, paprika, cinnamon, salt, and black pepper, mixing well to coat the meat.
- Add the chopped tomato, fresh parsley, and coriander, stirring to combine.
- Pour in the water, bringing the mixture to a gentle simmer.
- Once simmering, add the okra to the pot, stirring gently.
- Cover the tagine or pot with a lid and transfer to the preheated oven.
- Bake for 60 minutes, or until the meat is tender and the flavors meld beautifully.
- Remove from the oven and let it rest for a few minutes before serving.
