- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon

- Fresh cilantro - 2 tablespoons, chopped
- Water - 250 milliliters
Steps
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs to the pot, browning them on all sides for about 10 minutes.
- Sprinkle in the cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring well to coat the chicken.
- Pour in the water and bring to a simmer.
- Add the quartered preserved lemons and green olives, then cover the tajine or pot with a lid.
- Reduce the heat to low and let it cook for about 30-35 minutes, or until the chicken is tender and cooked through.
- Garnish with chopped cilantro before serving.
