Ingredients

  • Chicken thighs - 300 grams
  • Green olives - 100 grams, pitted
  • Preserved lemons - 1, quartered
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Water - 250 milliliters

Steps

  1. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the pot, browning them on all sides for about 10 minutes.
  5. Sprinkle in the cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring well to coat the chicken.
  6. Pour in the water and bring to a simmer.
  7. Add the quartered preserved lemons and green olives, then cover the tajine or pot with a lid.
  8. Reduce the heat to low and let it cook for about 30-35 minutes, or until the chicken is tender and cooked through.
  9. Garnish with chopped cilantro before serving.
