Ingredients

  • Chicken thighs - 300 grams
  • Green olives - 100 grams, pitted
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, cubed
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Chicken broth - 250 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a tagine or a heavy-bottomed pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  4. Stir in the cumin, paprika, cinnamon, salt, and black pepper, coating the chicken evenly with the spices.
  5. Add the sliced carrot, cubed potato, and chopped tomato to the pot, mixing well.
  6. Pour in the chicken broth and bring the mixture to a simmer.
  7. Cover the tagine or pot with a lid, reduce heat to low, and let it cook for about 40 minutes, or until the chicken is tender and cooked through.
  8. In the last 10 minutes of cooking, stir in the pitted green olives.
  9. Once done, remove from heat and sprinkle with fresh parsley before serving.
