Ingredients
- Chicken thighs - 300 grams
- Green olives - 100 grams, pitted
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Potato - 1 medium, cubed
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Chicken broth - 250 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a tagine or a heavy-bottomed pot over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the cumin, paprika, cinnamon, salt, and black pepper, coating the chicken evenly with the spices.
- Add the sliced carrot, cubed potato, and chopped tomato to the pot, mixing well.
- Pour in the chicken broth and bring the mixture to a simmer.
- Cover the tagine or pot with a lid, reduce heat to low, and let it cook for about 40 minutes, or until the chicken is tender and cooked through.
- In the last 10 minutes of cooking, stir in the pitted green olives.
- Once done, remove from heat and sprinkle with fresh parsley before serving.
