Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Ground lamb - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Dried apricots - 30 grams, chopped
  • Green olives - 30 grams, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Rice the cauliflower by cutting it into florets and pulsing it in a food processor until it resembles rice.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
  4. In a bowl, combine the steamed cauliflower, egg, almond flour, oregano, and salt. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  7. While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until softened.
  8. Add the ground lamb to the pan, breaking it apart with a spoon. Cook until browned.
  9. Stir in cumin, cinnamon, paprika, and chopped dried apricots. Cook for another 5 minutes, then remove from heat.
  10. Once the crust is done, remove it from the oven and top with the spiced lamb mixture, sliced olives, and sprinkle with fresh cilantro and mint.
  11. Return the pizza to the oven for an additional 5-7 minutes to heat through.
  12. Slice and serve hot, garnished with extra herbs if desired.
