Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Ground lamb - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Dried apricots - 30 grams, chopped
- Green olives - 30 grams, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
Steps
- Preheat your oven to 220°C (428°F).
- Rice the cauliflower by cutting it into florets and pulsing it in a food processor until it resembles rice.
- Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
- In a bowl, combine the steamed cauliflower, egg, almond flour, oregano, and salt. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until softened.
- Add the ground lamb to the pan, breaking it apart with a spoon. Cook until browned.
- Stir in cumin, cinnamon, paprika, and chopped dried apricots. Cook for another 5 minutes, then remove from heat.
- Once the crust is done, remove it from the oven and top with the spiced lamb mixture, sliced olives, and sprinkle with fresh cilantro and mint.
- Return the pizza to the oven for an additional 5-7 minutes to heat through.
- Slice and serve hot, garnished with extra herbs if desired.
